A souvenir photo of a Parisian bouillon

When it comes to good food in Paris without breaking the bank, it’s impossible to miss the Bouillons. These popular restaurants have become veritable institutions. They offer traditional French dishes at unbeatable prices. Let’s take a look at their history, how they operate today, and some of the best places to enjoy this unique experience.

đŸ›ïž The origins of Bouillons: a popular story

Bouillons appeared in Paris at the end of the XIXᔉ century. At the time, Parisian workers were looking for places to eat hot and fast, without spending a fortune. It was then that Pierre-Louis Duval, a butcher, had the idea of opening an establishment offering bouillon (meat soup) and a few simple dishes. It was an instant success!

Soon, other Bouillons sprang up all over Paris. They served not only soups, but also complete meals, always at affordable prices. The elegant decor, often in Art Nouveau style, offered a warm, friendly atmosphere, attracting working-class and middle-class alike.

🍮 What can you find in a Bouillon today?

Today, Bouillons continues this tradition of good French cuisine accessible to all. The menu features timeless classics:

  • Eggs mayonnaise (around €2)

  • Leeks with vinaigrette (3 to 4 €)

  • Burgundy snails (around €7 for 6 pieces)

  • Beef bourguignon, veal blanquette, andouillette AAAAA

  • Floating island, profiteroles, crĂšme caramel

Prices remain incredibly low. Count on average €10 to €15 for a complete meal, excluding drinks. Some main courses even cost less than €10, which is exceptional for the capital.

📍 So me mythical addresses

Bouillon Chartier

The most famous is undoubtedly Bouillon Chartier, founded in 1896. Located at 7 rue du Faubourg Montmartre (9ᔉ arrondissement), it is a listed historic monument.

The decor is spectacular: large rooms, huge mirrors, gilded moldings and waiters in black and white uniforms. Here, service is fast and the atmosphere is unique. The menu offers dishes from €1 to €15 maximum.

Bouillon Pigalle

Opened more recently, in 2017, Bouillon Pigalle has won over a young, trendy clientele while respecting the Bouillon spirit. Located 22 boulevard de Clichy (18ᔉ arrondissement), just opposite the Pigalle metro station, it boasts unbeatable prices.

Bouillon Pigalle also offers a few modern touches, such as homemade fish and chips and vegetarian dishes. Its huge terrace is very pleasant in fine weather.

Bouillon République

Following the success of Pigalle, in 2021 the creators opened Bouillon RĂ©publique, 39 boulevard du Temple (3ᔉ arrondissement). Same winning recipe: large, bright room, meticulous decor, efficient service and, above all, unbeatable prices.

What’s special here? You can wait your turn in the adjoining bar, enjoying a glass of wine at a low price.

đŸ„‚ Why are Bouillons still so appealing?

There are several reasons for this success, which spans generations:

  • Unbeatable prices: In Paris, it’s hard to beat the prices.

  • Authenticity: Dishes are homemade according to traditional recipes.

  • Atmosphere: Long tables are shared in a lively, friendly atmosphere.

  • Historic decor: A real trip back in time.

  • Quick service: Ideal for a lunch break or dinner before going to the theater.

Les Bouillons perfectly embodies the Parisian spirit, where quality and affordability meet.

🎯 Tips to make the most of your visit

  • Avoid peak times: If possible, arrive before 12pm or after 2pm for lunch, before 7pm for dinner.

  • Be prepared to share your table: That’s the Bouillon spirit!

  • Dont forget to check the specific times for each establishment.

  • Bring cash: Even if credit cards are accepted, some Bouillons prefer quick payment in cash.

💕 My experience at a Bouillon in Montparnasse

I have wonderful memories of my first visit to Bouillon with my lover, Titi. It was a chilly autumn evening, and we were looking for a warm place to dine without blowing our budget. As soon as we walked through the door of Le Bouillon, we were charmed by the lively atmosphere and the large mirrors on the walls.

We shared eggs mayonnaise, boeuf bourguignon and a floating island, all for just €30 for two. Service was fast and smiling, despite the crowds. Since then, it’s become our little tradition: whenever we feel like treating ourselves without breaking the bank, we go back to a Bouillon. We cherish these simple, gourmet moments full of happiness.
